Coconut Porridge

I love a good bowl of warming porridge in the morning. And I love EVERYTHING coconut! So this creamy coconut porridge makes the perfect weekday or lazy weekend breakfast. An energy boosting start to the day, the coconut oil and milk in this recipe improves heart health, increases your metabolism, promotes a lean body and supports your immune system.

This recipe is dairy-free and vegan. If you have a gluten allergy (like I do) make sure you get gluten-free oats. This porridge is incredibly simple, requiring just 10 minutes, and 1 pot to prepare. I hope you love it!

Creamy. Hearty. Healthy.


⅓ cup oats (I used gluten free oats)

1 cup water

4 tablespoons coconut milk

½ tablespoon maple syrup (or sub any sweetener)

A dash of vanilla extract

1 tablespoon coconut oil

1 tablespoon nut butter (I used almond butter)

Optional Toppings

Chopped fresh fruit such as peaches, pears, apples, strawberries or bananas – I love the peaches and creamy coconut combo

Chia seeds


Coconut flakes


Simply add the water, oats, coconut milk, maple syrup and vanilla extract to a saucepan and cook the mixture on a medium heat for 3-5 minutes.

Add the almond butter and coconut oil to the mix and continue cooking the porridge until it reaches your desired consistency – I love thick, creamy porridge.

Pour it into a bowl, add all your favourite toppings and enjoy your breakfast! I topped mine with peaches and pistachios. Delicious!
