Cheeky Chocolatey Granola

If your childhood breakfast was big bowls of Coco Pops (sometimes even dinner), then you are going to love this granola. Super chocolatey, perfectly crunchy and loaded with antioxidants, fibre, protein and healthy fats - cacao, peanut butter and coconut flakes makes this granola irresistible without any of the guilt. Everything about this granola feels like a treat - but it doesn’t have any of the corn syrup or nasty chemicals you will find in boxed cereal. I prefer mine with almond milk and chopped fruit (or straight out of the jar). But it also makes the perfect topping for fruit smoothies, creamy oats, chia puddings and yoghurt.


Dry Mixture

2 cups of oats (I used gluten free oats)

1 cup quinoa puffs (or 1 additional cup of oats)

1 cup coconut flakes

½ cup slivered almonds

¼ cup pumpkin seeds

½ teaspoon salt

Wet Mixture

3 tablespoons cacao powder

1 tablespoon sugar-free peanut butter

1 teaspoon vanilla extract

⅓ cup maple syrup (or sub any sweetener)

¼ cup coconut oil


Preheat oven to 150 degrees C and line a large baking tray with parchment paper.

Add all the wet mixture ingredients to a small saucepan. Warm over a low heat until melted, stirring to combine. Remove the mixture from the heat when it is well-mixed and pourable. It should look like a thick chocolate sauce.

Add all the dry mixture ingredients to a large mixing bowl and top with the chocolate sauce.

Stir well to combine.

Transfer the mixture to the prepared baking tray and use a spatula to spread the mixture evenly and firmly press into the dish.

Bake in the oven for 20-25 minutes. All ovens are different so check your granola around the 20 minute mark to see if it needs to be baked for longer. *

Remove the granola from oven and let it cool completely for about 20-25 minutes.

Eat with almond milk and sliced strawberries - my favourite. Enjoy your healthy chocolatey breakfast! **

* If you don’t toss the granola while baking, the result will be a chunky granola, which I personally love. But if you want a more crumbly granola, toss/stir it a bit at the halfway point and once you take it out of the oven to break up the chunks.

** Store the granola in an airtight container to keep it extra fresh. It should keep for a couple of weeks.
