Fruit And Nut Overnight Oats

Breakfast is something that so many people skip due to time, but healthy breakfasts don’t have to be a chore and can be so quick and easy to make. Overnight oats are simple, delicious, creamy and hearty - and at the moment are my favourite breakfast as it is so hot in Nairobi! Here is an overnight oats recipe that you can try.


Oats Mixture

75g of oats (I used gluten free oats)

175ml of milk (almond, coconut, rice or other milk)

1 tablespoon maple syrup (or sub any sweetener, such as honey)

2 tablespoons of chopped nuts (I used a mixture of almonds and cashew nuts)

25g of dried cranberries (unsweetened)


Chopped fresh fruit such as apples, strawberries or bananas

Chia seeds

Peanut butter


Coconut flakes

Greek yoghurt


To a bowl or large mason jar add all the Oats Mixture ingredients and stir.

Press down with a spoon to make sure that all the oats have been moistened and are immersed in the milk.

Cover and set in the fridge overnight.

In the morning, open your Oats Mixture and enjoy as is or garnish with desired toppings. My favourite is chopped apples and a tablespoon of peanut butter.

Overnight oats will keep in the refrigerator for up to 2-3 days so is a perfect breakfast to prep on a Sunday night!
