I love chia seeds and use them all the time. The tiny little seeds pack a powerful nutritional punch –fibre, omega-3 fatty acids, potassium and magnesium - and are great for boosting energy and helping regulate digestion. While it’s easy to toss them into smoothies or on top of salads, this overnight creamy chia seed pudding takes five minutes to make and tastes like dessert – but is super healthy. Simply mix it before bed, pop it in the fridge, and enjoy your tasty breakfast the next morning!
Chia seed puddings are one of my favourite go-to breakfasts these days - although, I'd eat this anytime of the day.
Chia Seed Mixture
¼ cup chia seeds
1 cup almond milk
I tablespoon maple syrup (or sub any sweetener)
Chopped fresh fruit
Nuts and seeds
Whisk the almond milk, chia seeds, and sweetener together in a bowl. Let the mixture rest for five minutes and then whisk again to prevent clumping.
Cover and set in the fridge overnight.
In the morning, stir the chia seed mix well, breaking apart any clumps.
